This Italian Organic Carnaroli Risotto Rice, produced by Organico, is grown and packed in Bianze in the heart of the century-old rice fields of the Northern Po valley. Their partners, the Picco family have been cultivating rice there since 1878. They are dedicated to the environmental stewardship of the land and to preserving the culture and cultivation of rice.
Together with other local families they have formed a co-operative to both pack and develop find quality Italian rice. they grow a wide range of typical and newer varieties on their land. The rice is husked through a stone milling process that is more careful or gentle and therefore helps preserve the nutritional and taste qualities of the grain.
Carnaroli rice has large, rich grains and an amazing capacity to absorb flavours. It also benefits from a high starch content making it resistant to overcooking. Carnaroli rice differs from the more common arborio rice, due to its higher starch content and firmer texture, as well as having a longer grain. It is known as "the king of rices".

The main thing to remember when making a risotto is not to boil the rice separately. 250g of rice will serve 4-6 people. First prepare a litre of bouillon/water in a jug. Next put 2-3 tablespoons of olive oil in a deep pan and shallow fry onions, garlic and your chosen vegetables - smoked mushrooms, peppers, carrots, leeks, etc. Now add the uncooked rice to the pan and stir. Slowly add the liquid from the jug, letting the rice expand and absorb the liquid until it is taste-ready.
