Fresh figs stuffed with smoked Stilton (or goats cheese) & walnuts
A truly delicious dish where the sweetness of the figs perfectly compliments the saltiness of the cheese. Either leave the smoked Prosciutto off for vegetarians or add it if you prefer a meatier option!

Ingredients:
4 large fresh & ripe figs100g smoked Stilton or 100g smoked goats cheese
Small packet walnut halves
Salad leaves of your choice
4 slices smoked Prosciutto (optional)
Olive oil (preferably smoked olive oil) for drizzling
Balsamic vinegar for drizzling
Ground black pepper to taste
Preparation:
Prep time: 5-10 minutesCook time: 12-15 minutes
Serves: 4 people as a light starter or 2 people as a main meal
Instructions:
Preheat the oven to 190°C/fan oven 170°C/Gas mark 5Make a deep cross cut into the top of each fig
Stuff an equal amount of Smoked Stilton or Goats Cheese into each fig
Crush the walnuts on push them into the cheese
At this stage, if you choose to use Prosciutto, then wrap a slice around each fig
Place on a baking sheet and bake the figs for 12-15 minutes
Remove from oven and serve with the salad leaves
Pour any remaining juices from the baking tray over the figs
Drizzle with balsamic vinegar and olive oil, & finish with a grind of black pepper to taste
